What is knife-grinding?

Knife-grinding is a very efficient and fast sharpening process that makes it possible, under certain conditions, not to deburr the edge of the cutting edge. Indeed, it does not produce sharp edge or if it does, it is not produced at the same place.

Everything is in the direction of rotation of the wheel (water). In the grinding process, the grinding wheel attacks the edge in the opposite direction. In conventional sharpening, the grinding wheel attacks the cutting edge and ends up with the wire, creating sharp edge. The knife cutting edge has a higher resistance in grinding than in conventional sharpening, therefore a longer cutting lifespan, with a better cutting power. Saving material by not creating a sharp edge also reduces blade wear. Knife-grinding is therefore economical and environmentally friendly.

With a fine-grained grinding wheel, while being faster than conventional grinding, knife-grinding eliminates the need for grinding and polishing the cutting edge.
